There is no question that the Pasilla Chili is the most commonly used dried chili in Mexico. It has a medium level of heat, and combines the flavors of tobacco, prunes and sun-dried raisins for a fruity flavor.

The pods can be stuffed or the seeds can be used ground or toasted in a great variety of typical Mexican dishes, such as "Mixiotes" "Mole Poblano" and "Revoltijo"; as well as in many sauces and soups.
